I don`t think that
Raspberry -> HDMI -> CONVERTER -> SPDIF -> DAC

is so bad, I used to have a Musical fidelity V-link 2 http://www.musicalfidelity.com...../v-linkii/

which would be Raspberry -> USB -> CONVERTER -> SPDIF -> DAC

there are a lot of products like this such as the hiface http://www.m2tech.biz/hiface.html etc.

it gives great flexibility on connecting to non usb dacs.

where I lack knowledge is the comparison of HDMI audio in comparison to USB

I may get one of the cheaper HDMI to SPIDIF converters and try for myself

Anyway, generally speaking I don't link to apply too much conversions to the audio stream. Here you'll have

Raspberry -> HDMI -> CONVERTER -> SPDIF -> DAC

As you'll see, there are lot of steps before our precious bits get to the dac ... Anyway it's worth trying, I found this that could be useful also for hdmi splitting:
