I have the same problem.
Trying with an official airplay from Apple, works fine.
But using RaspyFi I can't find any "airplay" icon in my iPhone...

Have the same problems as you and tried everything you described.
Got raspbmc on the same network with functioning airplay so i have no idea whats wrong :S
Gave up and built a automatic watering system instead...

Might be an idea to make the PI to create an access point (if you have a wifi diongle) to which you can connect and scan available devices to simplify the network a bit.

Do you have any other AirPlay devices in your house that you can see and connect with? If not, it might be a network problem. Possibly your router blocks the ports used to see and connect to an Airplay device.
